Dark Chocolate Chip Peanut Butter Cookies

I've been seeing a lot of peanut butter and chocolate recipes lately. It seems like everyone has caught the bug that I so graciously accepted a long time ago. Peanut butter and chocolate is a match made in heaven, and once again, it's proven to be my favorite combination.


Usually with Amie and me, Thursday night is cake night, but what's a rule if it can't be broken? Our other friend Lizzy was over and--prepare yourselves-- she doesn't like chocolate. That rules out brownies. After an assessment of the ingredients at Amie's house, we decided that cookies were the answer, but instead of the go-to chocolate chip recipe, we branched out a little, and just went with it.
Peanut butter cookies are good because they can stand alone (for Liz!). Peanut butter cookies with chocolate chips in them are great because it tastes like a mellow peanut butter cup with a buttery bite and a richer chocolate. Therefore, this recipe is good for chocoholics and weirdos alike. I mean, not weirdos...just non-chocolate lovers.

What ya need:
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup peanut butter
3/4 cup sugar
1/2 cup firmly packed light brown sugar
1 large egg, at room temperature
1 tablespoon milk
1 teaspoon vanilla extract
1 cup dark chocolate chips


What ya do:
1. Preheat oven to 350 degrees. In a large bowl, combine flour, baking soda, baking powder, and salt. Set aside.
2. In a large bowl, beat the butter and the peanut butter together until fluffy (I love this part). Add the sugars and beat until smooth. Add the egg and mix well. Add the milk and the vanilla extract. Add the flour mixture and beat thoroughly. Stir in the chocolate chips. (If you have a non-chocolate eating friend, reserve some of the dough aside)
3. Drop by rounded teaspoonfuls onto ungreased cookie sheets, leaving enough room for them to spread...they will!
4, Bake for 10 to 12 minutes and make sure not to overbake. They are ready even if they don't look like it.

This recipe was perfect with a tall glass of milk...betcha can't have just one!

 On a side note, the cutest thing happened today. I've been training this guy at the fitness center for a few weeks and today he brought me a loaf of bread from Great Harvest Bread Company to thank me!! How did he know I would love this awesome little gift? It was a lovely round 100% whole grain bread with a small scent of honey and that chewy texture only achievable from a bread hot out of the oven. I died when he gave it to me. Some people in the fitness center probably thought it was weird, but I think he got it right on the money.

What a sweet gift! I would love for someone to bring me a loaf of bread. And you cookies look yummy. Like your friend, I'm not the biggest fan of chocolate. I would much rather have just plain peanut butter...crazy, I know!

I have to say those cookies look like something you would consume by the plateful with large glasses of milk....peanut butter and chocolate is a marriage made in heaven!

I love darker chocolate with peanut butter as long as the peanut butter is a bit sweet. Good recipe and what a nice client you have.

Wow, these look so delicious. How many did you eat right out of the oven? i know you're not supposed to do that, but i ALWAYS do. I think they that's when they taste the best. :)

I agree with you... I seem to be seeing chocolate and peanut butter combinations every where! But I'm not complaining! The cookies look very delectable...
