Cookies and Cream Cake: Happy Birthday to Me!

The first birthday party I remember was my sixth. I was wearing a denim jumper with a pink tee shirt. I had a big bow in my hair and pizza on my face. I had a pinata. My old neighbor gave me a white barbie corvette. We played musical chairs. I pinned a tail on the donkey. Life was sweet.

My birthday request back then was simple. A Brenner's Bakery cake with big purple  frosting flowers.
Well, that was 17 years ago, and you know what? I would gladly still have that cake. But how could I go to a bakery after all of my readers' great homemade cake ideas? My kitchen will be filled with them soon, I assure you, so thank you.

I happen to love the combination of cake and ice cream. Sure, I'll try your mousse, and I'll crack your creme brulee, but if you really want to impress me, keep it simple please. Bake me cookies and cream...and for the record, that's just what my mom did!

What ya need:
For the cake--
1 package (18-1/4 ounces) white cake mix
1-1/4 cups water
1/3 cup canola oil
3 egg whites
1 cup coarsely crushed cream-filled chocolate sandwich cookies (about 8)

For the frosting--
Any Vanilla Frosting of your choice OR:
1/2 cup shortening
4 to 4-1/2 cups confectioners' sugar
1/4 cup milk
1 teaspoon vanilla extract
Cream-filled chocolate sandwich cookies and crushed cream-filled chocolate sandwich cookies, optional
What ya do:
1. In a large bowl, combine the cake mix, water, oil and egg whites; beat on low speed for 30 seconds. Beat on high for 2 minutes. Gently fold in crushed cookies.
2. Line 2 nine inch baking rounds with parchment paper. Pour in batter evenly into two pans. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
3. For frosting, beat the shortening, sugar, milk and vanilla in another large bowl until smooth. Spread frosting between layers and over top and sides of cake. Decorate the top with cookie and the sides with crushed cookies if desired. 
4. Add girly candles and call it a night.
