Remember when I made that mango salsa? Well, it goes really well with this chicken number I tried. It's the easiest marinade ever and a few minutes on the grill later, it's perfect for a warm night.
I've made the marinade twice this weekend. Friday, well, because I didn't have ingredients to a fancy marinade and Sunday because I wanted to share how ohh la la my simpleton marinade was. So, the pics are a mixture between the two. If you're low on groceries, you still will probably be able to whip up this easy mix.
What ya need:
2 tablespoons honey
2 tablespoons Dijon mustard
1 tablespoon extra-virgin olive oil, plus more for grill
1/2 teaspoon kosher salt
Freshly ground black pepper
4 boneless skinless chicken breasts, butterflied
1 lime, cut into wedges
What ya do:
Umm.. Combine everything (but the limes)? Mix it all up? Put them in a large plastic re-sealable bag with chicken and refrigerate at least 2 hours.
Preheat the grill to medium heat.
Remove the chicken from the bag and arrange it on a well-oiled grill. Cook until a nice crust forms on both sides, about 4 to 5 minutes per side. Let the chicken rest on a serving platter for 10 minutes before serving. Serve with lime wedges.

That looks good! Though I would skip the asparagus since it gives me gas.
