After a few weeks of being pretty lax about the foods I'm putting into my body, it's (somewhat) back on track this week. My newest issue of Cooking Light will lead the way...
Meal #1: Almost Meatless Sloppy Joes
Meal #2: Pan Seared Shrimp and Arugula Risotto
Meal #3: Cinco de Mayo aka Dad's Birthday aka OUT!
Meal #4: Pizza Margherita
Meal #5: Ulah Bistro in D.C. (I'm super excited about this so-called "modern American cuisine," and it looks like their specialty is brick-oven pizza...dying)
This week will be good... all of these recipes got high reviews and they're all about 400 calories a serving... pretty good if you ask me. The risotto looks so spring-y and fresh! And homemade pizza... hello!
Although, with all this mindful eating, you should also know that I'm making red velvet for my dad on Wednesday (gulp) and a rainbow cake for my friend Matt on Friday (yikes). All this plus finishing up two finals and two presentations. Got to love the last week of school. Well, that's all for now, I'll be back later with the recipes!

I love that you plan out your meals for the week. I love to do that too--it seems to "insure" good cooking, instead of thrown together meals!
