Key Lime Dream

A happy day for me was when I realized that anything I eat in a restaurant or a friends, I can create for myself. No, it won't be exactly the same, but often times, it's better when made with your own touches.

A lot of people have the misconception that "easy" cooking is bad cooking. After Julie & Julia, a lot of people were convinced that the art of cooking meant hours slaving over a hot stove. I disagree. In fact, who has time for this? Not I. And guess what? When I'm hungry, or craving something, I don't want to wait four hours until I eat it!

Enter the easiest Key Lime Pie recipe you will ever encounter. Better than easy, it is delicious. You've got to try this if you've ever had real Floridian Key Lime Pie. It's to die for! Did I mention it's a cinch? Oh yes, I did. Well anyway, here goes nothin'

What ya need:
9" graham cracker pie crust
14 oz. can of sweetened condensed milk
3 egg yolks (whites not used)
½ cup Nellie & Joe's Key West Lime Juice (THIS BRAND IS A MUST!)

What ya do:
Combine milk, egg yolks and lime juice. Blend until smooth. Pour filling into pie crust and bake at 350ยบ for 15 minutes.
Stand and relish the fact that you've just made a dessert in less than 20 minutes. Pat yourself on the back even. Allow to stand 10 minutes before refrigerating. Just before serving, top with freshly whipped cream and serve! You could also do meringue, but remember this is an easy recipe. Meringue is the devil, to me. 


That's it! Simple. Scrumptious. No one has to know how little time you spent. It's lovely. If you want a summertime dessert that can be on the table in a jiffy, check this out!

yes, when I can't get real key lime or mexican ones, this is the only brand I buy

I have to say, this post makes me crazy homesick. I am from Miami, and I know the awesomeness that is a slice of Key Lime Pie from Joe's Stone Crabs. Ohhh, sweet and tart and custardy and buttery and cold and perfect... I could eat half a pie for breakfast!

Your Key Lime project looks pretty swell, too! I agree that meringue topping is far too distracting on such a lovely pie, but I am actually even more of a purist than that! I say, nothing but custard! A dollop of freshly whipped cream is acceptable for show, but I'm here for the custard...

This looks crazy delicious! I am a huge fan of condensed milk (often straight from the can). Plus, the whipped cream probably tastes better than meringue anyhow :)

This pie looks tasty, and it really is simple! That makes it so much better! You're right... meringue IS the devil! Most of my baking tragedies have had to do with meringue :(

the other day my roommate gave me one of her boxed cookies: key lime white chocolate chip! they were great. i'm not a fan of boxed cookies (preservatives and crap in them) but i have googled and found some awesome recipes! i just might make one. unfortunately you need freaking 12 limes to make them! how crazy is that...
