Lindsey's Lemon Bars

I know I've mentioned coaching before. It's one of the most gratifying things I do, other than maybe slicing into that first piece of one of the delightful cakes I've been making. Coaching, however, is up there.

Other than the connection, leadership and yadda yadda, sometimes your players reward you! And this was the case this weekend!

One of the girls I coach lives next door to baking partner Amie. Her name is Lindsey, and she likes my blog. She voluntarily reads it. I only told her to "follow me" for on-the-surface fandom, but she continues to keep up with it. I'm honored. She also is a health nut, and has told me her parents don't let her in the kitchen much. Sounds a lot like me when I was her age. Did I really just say "when I was her age?" I'm 22. C'mon. Anyway...

As I saw her in passing I yelled "bake me something when I get back," and was half kidding. Halfsies. 


Guess what? She listened! Lemon bars, to be exact. And though she said she just made the first recipe that popped up from a Google search, she did a wonderful job, and I am very happy to be posting about them as I nibble away at the one next to me. I also told her I'd post it, because well, she deserves a little credit. So without further ado, here's Lindsey's first "post."

"Ok so I’m really cool and picked the first thing off Google but whatever! I had been thinking about them all week and ended up very pleased. It was super easy and I followed directions because that’s the extent of my skill. My pan was warped so that made for some differing thicknesses hehe but no problem…OKAY ENOUGH HERE WE GO!"

Lemon Bars
What ya need:
"THE CRUST!!"
2 cups sifted AP Flour
1 cup confectioner's sugar
1 cup butter, melted

"THE GOOEY PART!!!"
4 eggs
2 cups white sugar
1 teaspoon baking powder
1/4 cup all-purpose flour
5/8 cup lemon juice "OK I just have to say…what the heck who can measure this?? I used ½ and a little more"

What ya do
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
2. In a medium bowl, stir together 2 cups flour and confectioners' sugar. Blend in the melted butter. Press into the bottom of the prepared pan.
3. Bake in the preheated oven for 15 minutes, or until golden. In a large bowl, beat eggs until light. Combine the sugar, baking powder and 1/4 cup of flour so there will be no flour lumps. Stir the sugar mixture into the eggs. Finally, stir in the lemon juice. Pour over the prepared crust and return to the oven.
Bake for an additional 30 minutes or until bars are set. Allow to cool completely before cutting into bars.


YUM. These were awesome, she was right. A classic recipe that deserves revisiting, for sure. Thanks Linds!

Hahaha, this post is too cute. :) I think us foodies spend so much time cooking and baking for others that it is really nice when someone makes something for us!

How sweet! Growing up, my best friend's mom would bake lemon bars for us...she brought me a batch last week and it touched my heart. Yours look like they were great too!

Lemon bars are one of my favorite things in the world. I'm always tweaking mine to make it better though this doesn't seem to need any of that. Great job!

looks nice and thick, gooey, just the way I like 'em.... you know, when I first started cooking I thought 'AP flour' meant A&P brand and asked my mom what was the difference... to this day I still can't get the look of her face from my memory, and that's a good thing...

Lindsey, check out the recipe I found if you want to take it a step further. Of course Lemon Bars are always a treat! But I tried a "Shaker Style" lemon bar, using whole lemons, sliced super-thin, "marinated" in the granulated sugar overnight. The lemon flavor permeated the sugar... so good. (And, didn't even have to zest any lemons :)
